In the center of the plate rest two substantial pieces of beef cheeks. They are so dark they almost reach chocolate brown, covered in a shiny, thick glaze of reduced demi-glace sauce. The sauce is the essence of flavor – sticky, full of collagen, with a deep, winey finish that shimmers in the light like a sheet of dark amber. The meat's texture is a culinary masterpiece. You don't need a knife – a gentle press of a fork is enough to pull the meat apart along the grain. It is incredibly tender and juicy, and every fiber is infused with the flavor of the marinade of root vegetables, red wine, juniper, and bay leaf. The meat practically melts in the mouth, leaving an intense umami sensation.
